Doukissa – Cypriot Duchess Cake (Δούκισσα)

Doukissa – Cypriot Duchess Cake (Δούκισσα)
A nostalgic no-bake Cypriot favourite made with crushed biscuits, cocoa and rich chocolate. Its name means "duchess" and is served chilled in slices, perfect with a coffee or after dinner. You can make it plain or elevate it with brandy, orange zest and nuts.
Ingredients
Method
- Place the broken biscuits and nuts, if using, in a large mixing bowl.
- In a saucepan over low heat, melt the butter. Add the chocolate and stir until smooth. Add the condensed milk, cocoa powder, orange zest, instant coffee and brandy, if using, and mix until fully combined.
- Pour the chocolate mixture over the biscuits and nuts. Add the sea salt and gently fold until everything is evenly coated.
- Lay a large sheet of baking paper on a clean work surface. Spoon the mixture along one edge and shape into a log. Roll the paper around the mixture, twisting the ends to secure. Wrap tightly in plastic wrap and gently roll to create an even shape.
- Refrigerate for at least 4 hours, or until completely firm.
- Slice and serve chilled.
