Fasolaki Yiaxni – Green Bean and Beef Stew in the Pressure Cooker (Φασολάκια Γιαχνί)
A comforting Cypriot stew of tender beef, green beans, tomatoes, and warm spices. Traditionally simmered for hours, this version uses a pressure cooker for the same deep flavour in a fraction of the time. Served with fresh koulouri dakylia bread or rice, it’s a wholesome family favourite.
Ingredients
Method
- Heat a drizzle of olive oil in your pressure cooker (or a large casserole pot) over medium-high heat. Brown the beef on all sides.
- Add the onions and cook until softened. Stir in the garlic paste and tomato paste, cooking for 1-2 minutes until fragrant.
- Add the tomatoes and simmer for 6-7 minutes, allowing them to break down.
- Stir in the carrots, green beans, stock powder, cinnamon, and a good pinch of salt and pepper. Pour in just enough boiling water to cover the ingredients.
- Seal the pressure cooker lid and bring to pressure. Cook for about 30 minutes, then turn off the heat and allow the pressure to release naturally (wait until the pin drops or the weight falls).
- If using a casserole pot instead, cover with a lid and simmer gently for 1–1½ hours, or until the beef is tender.
