Fennel, Orange and Pomegranate Salad

Fennel, Orange and Pomegranate Salad

A fresh, gently sweet salad with shaved fennel, citrus and a light, sharp dressing. It’s crisp without being harsh, and works beautifully alongside roasted meats, grilled fish, or as part of a larger spread.
Servings: 4 servings
Course: Dinner, Lunch
Cuisine: Mediterranean

Ingredients

Salad
  • 3-4 handfuls leafy greens
  • 1 fennel bulb
  • 1 shallot
  • 2 oranges
  • 4 tablespoons pomegranate seeds
Dressing
  • 4 tablespoons extra virgin olive oil
  • 4 tablespoons freshly squeezed orange juice
  • 4 tablespoons sherry vinegar or red wine vinegar
  • sea salt flakes and freshly cracked black pepper to taste

Method

  1. Arrange the leafy greens on a large platter.
  2. Using a mandolin, speed peeler, or sharp knife, thinly slice the fennel and shallot. Scatter over the greens.
  3. Peel the oranges, slice into thin rounds, and reserve any juice. Arrange the orange slices over the salad and sprinkle with the pomegranate seeds.
  4. Combine all dressing ingredients in a jar, shake well, and adjust seasoning to taste.
  5. Spoon the dressing over the salad just before serving.
