Flaounopita – Halloumi Bread with Raisins (Φλαουνόπιτα)

Flaounopita – Halloumi Bread with Raisins (Φλαουνόπιτα)
If you love flaounes, the cheese pastries Cypriots traditionally bake at Easter, then you’ll love this shortcut version even more. It has all the flavour and none of the fuss. In Cyprus, they used to call it Flaouna tis O̱ras, meaning flaouna in an hour – and they weren’t wrong. This recipe is fragrant, cheesy, subtly sweet and ideal for breakfast, lunchboxes, or afternoon coffee.
Ingredients
Method
- Preheat the oven to 180°C (fan-forced). Grease a bundt, loaf tin, or muffin tray well.
- Beat the olive oil and egg yolks until the mixture becomes creamy and light. Pour in the milk and combine.
- Sift in the flour and baking powder and fold gently with a spatula.
- Whisk the egg whites to soft peaks and fold into the batter.
- Add the cheeses, raisins, mint, mastic, and mahlepi and gently fold everything together.
- Pour into your prepared tin and sprinkle generously with white and black sesame seeds.
- Bake for 50-60 minutes on the middle shelf, or until a knife inserted comes out clean.
Notes
For muffins, bake at 180°C for 25-30 minutes.

Hi,
I made this recipe tonight and it was lovely 😊 took a little longer than 1 hour but I covered it with foil so it didn’t burn. I added fennel seeds because I couldn’t get mastic powder.
Husband used it to mop up roast lamb juices he liked it too. Thanks
I’m so so happy you made this! Thanks for dropping by and writing in – look forward to hearing from you again 🙂
