Glyko Karpouzi – Watermelon Spoon Sweet (Γλυκό του Κουταλιού Καρπούζι)

Glyko Karpouzi is a traditional Cypriot spoon sweet made from watermelon rind. A beautiful example of no-waste cooking, where the leftover rinds are transformed into chewy, crunchy, jewel-like preserves soaked in syrup infused with lemon and vanilla. Typically served cold on a small plate with a glass of water, it's a nostalgic treat offered to guests as a gesture of hospitality.
Servings: 1 litre jar (approx)
Course: Dessert, Sweets
Cuisine: Cypriot

Ingredients

For the rind
  • 500 g watermelon rind peeled and cut into 4–5 cm pieces (leave a little red flesh for colour and texture)
  • 10 g pickling lime or food-grade calcium hydroxide
  • 125 ml lemon juice
  • 2 cups ice cubes
For the syrup
  • 500 g caster sugar
  • 250 ml water
  • 2 teaspoons vanilla sugar
  • 1 tablespoon lemon juice

Method

  1. In a large bowl, dissolve the pickling lime in 3–4 cups of water. Submerge the watermelon rind, making sure it’s fully covered. Soak for 1 hour, stirring occasionally to prevent the lime from settling.
  2. Drain and rinse the rind thoroughly under cold water to remove lime residue. Transfer to a large pot, cover with fresh water and bring to a vigorous boil for 10 minutes. Drain again.
  3. Refill the pot with cold water, return the rind, and bring to a boil. Lower the heat and simmer for 15–20 minutes or until the rind can be easily pierced with a toothpick. Drain, then transfer to a bowl with ice cubes and 125 ml lemon juice. Let cool completely.
  4. In a deep pot, combine sugar and water over low heat. Stir until the sugar dissolves completely.
  5. Add the drained rind to the syrup. Bring to a gentle boil and cook for 10–15 minutes, or until the syrup begins to thicken. Add the vanilla sugar and lemon juice in the final minutes.
  6. Allow the mixture to cool in the pot, then transfer the rind and syrup into sterilised jars. Store in the fridge.

Notes

  • Serve cold in small portions with a teaspoon, alongside a cup of coffee or a glass of cold water.
  • Pickling lime helps keep the rind firm and gives it that signature chewy, crunchy texture. Make sure it’s food grade and rinse thoroughly after soaking.
