Christmas Halloumi Puffs with Sour Cherry Jam
INGREDIENTS
2 sheets of puff pastry
1 egg, beaten
4 tsp white sesame seeds
1/2 tsp black sesame seeds
1/2 block halloumi, cut into 3cm cubes
sour cherry jam (recipe here)
fresh thyme for decorating
METHOD
Preheat the oven to fan 180°C. Line a baking tray with baking paper. Place the puff pastry sheet on a lightly floured surface and double the sheets on top of each other by adding some of the egg wash in between and lightly pressing.
Cut into squares, about 4cmx4cm each, brush with egg wash and sprinkle generously with your seed mix.
Transfer your squared to the lined baking tray and bake for 12-15 minutes until the pastry is puffed up and is lightly golden.
Top each pastry square with a small piece of halloumi and return to the oven for 10-12 minutes until the halloumi and pastry are golden.
Carefully top each puff with cherry jam, garnish with fresh thyme sprigs and serve immediately.
