Mini Christmas Pudding Jacket Potatoes with Hummus
INGREDIENTS
500g baby potatoes
2 tbsp olive oil
1 tbsp salt
6-7 sprigs fresh rosemary
hummus
pomegranate seeds
fresh rosemary to decorate
METHOD
Preheat oven to 180C fan. Prick potatoes with a fork, and rub them with olive oil and salt. Bake on a baking tray for 1 hour and leave to cool for 10-12 minutes.
Cut a cross on the top and pinch the base to open it up a little. Add a teaspoon of hummus, decorate and place 2 pomegranate seeds and 2 rosemary leaves on top of each potato so it looks like a Christmas pudding, finish off with freshly ground black pepper.
