Homemade Strawberry Jam

Homemade Strawberry Jam

A classic, no-fuss strawberry jam that captures the sweetness of summer in a jar. Perfect on toast, scones, or stirred through yoghurt.
Servings: 2 400ml jars (approx)
Course: Sweets

Ingredients

  • 1 kg strawberries hulled and roughly chopped
  • 500 g sugar
  • 60 ml lemon juice

Method

  1. Start by placing a small plate in the freezer (to test setting point later).
  2. In a large saucepan, combine strawberries, sugar, and lemon juice over medium heat. Stir until sugar dissolves and the mixture looks glossy.
  3. Increase to a rolling boil, stirring continuously. If it begins to rise too high, reduce heat slightly. Boil hard for 60-90 minutes, or until thickened.
  4. Drop a spoonful of jam onto the chilled plate and freeze for 1-2 minutes. Run your finger through the middle. If it wrinkles and holds its shape, it’s ready.
  5. Let the jam sit and cool slightly for 10-15 minutes. Pour into sterilised warm jars, filling just below the rim. Seal and store in a cool, dry place.

Notes

Stored up to 12 months unopened. Refrigerate after opening.
