Servings: 4
Course: Dinner, Main Course
Cuisine: Cypriot

Ingredients

  • 1 whole chicken or preferred cut
  • 250 g Mitzides macaroni or other tubular/favourite pasta
  • 1 tablespoon dried mint
  • Grated halloumi as much as you like
  • fresh lemon to serve
  • salt and pepper to taste

Method

  1. Place the chicken in a large pot and cover with water. Bring to a boil, then simmer for 30 to 40 minutes or until the chicken is fully cooked.
  2. Remove the chicken and set aside. Add the pasta and a generous pinch of salt to the simmering chicken stock and cook until al dente.
  3. While the pasta cooks, shred or slice the chicken. In a bowl, grate the halloumi and mix it with the dried mint.
  4. Once the pasta is cooked, ladle it into bowls along with some of the chicken broth. Top with shredded chicken, a good squeeze of lemon juice and a generous amount of grated halloumi and mint.
