Ingredients

  • 1 kg marinara mix
  • 1 onion finely chopped
  • 4 garlic cloves minced
  • 4 tablespoons white wine
  • 2 tins chopped tomatoes
  • 2 teaspoons dried parsley
  • ½ teaspoon honey
  • 250 g spaghetti pasta
  • 500 ml boiling water
  • 1 handful fresh parsley finely chopped
  • 1 lemon zest and juice to taste
  • Olive oil for cooking

Method

  1. Heat a large pot over medium heat with a drizzle of olive oil. Add the marinara mix and cook until just done. Remove and set aside.
  2. In the same pot, add more olive oil if needed and sauté the onion until soft and translucent.
  3. Add the garlic and cook for another minute.
  4. Pour in the white wine and let it simmer until the alcohol evaporates.
  5. Add the tinned tomatoes, dried parsley, and honey. Stir to combine.
  6. Add the spaghetti and boiling water, ensuring the pasta is submerged. Stir occasionally to prevent sticking.
  7. Once the pasta is nearly cooked and the sauce has thickened, return the seafood to the pot and toss gently to coat.
  8. Finish with fresh parsley, lemon zest, and juice to taste. Serve immediately.
