Sweet, Spicy, Tangy BBQ Garides – Barbecued Prawns

Big flavours in a quick marinade. Sweet, sharp, a little heat, and that smoky char that makes the prawns taste incredible.
Servings: 4 servings
Course: Appetiser

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 4 garlic cloves crushed (about 1 tablespoon)
  • 2 tablespoons tomato paste
  • 1 tablespoon honey
  • 1 tablespoon pomegranate molasses
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1/2 teaspoon harissa paste
  • 1 tablespoon fresh coriander chopped, plus extra for serving
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 12 large prawns heads and shells on, butterflied and deveined

Method

  1. Butterfly the prawns with a serrated knife and remove the vein.
  2. In a bowl, mix all marinade ingredients. Add the prawns and coat well.
  3. Preheat the barbecue on high heat. Place the prawns on the grill and cook for 6 to 7 minutes, turning once. Baste with the reserved marinade as they cook. They should turn pink and just cook through.
  4. Serve with a squeeze of fresh lemon juice and chopped coriander.
