The Queen’s Scones

The Queen’s Scones

These buttery scones are fit for royalty – literally. I shared this recipe on Sydney’s Channel 7 The Morning Show for the Queen’s Birthday in 2021 (my first ever live TV segment!) and everyone loved them. Best served warm with strawberry jam and clotted cream (jam first, of course!).
Servings: 12 scones
Course: Afternoon / Morning Tea
Cuisine: English

Ingredients

  • 400 g self-raising flour
  • 1 level teaspoon baking powder
  • 20 g butter
  • 30 g sugar
  • 1 egg beaten
  • 125 ml thickened double cream
  • 125 ml milk
  • 1 egg yolk to glaze
Serve with
  • strawberry jam and clotted or dollop cream

Method

  1. Preheat oven to 200°C (fan-forced).
  2. Rub the flour, baking powder, and butter together with your fingertips until it resembles breadcrumbs.
  3. Mix in the sugar, beaten egg, cream, and milk until just combined. The dough should be sticky-don’t over-mix.
  4. Turn out onto a well-floured surface and gently pat the dough to about 2.5cm (1 inch) thick.
  5. Cut rounds with a scone cutter without twisting and place them on a lined baking tray.
  6. Glaze the tops with egg yolk.
  7. Bake for 12-15 minutes or until golden brown.
  8. Cool slightly on a wire rack. Serve warm with jam and cream.
