Yiayia Tallou’s Lemonada – Cypriot Lemonade (Λεμονάδα της Γιαγιά Ταλλούς)

A true taste of Cyprus, this lemonade is a family favourite. Sweet, tangy, and refreshing, it captures the sunshine of Mediterranean lemons in every sip. Traditionally made in large batches and stored for guests, it’s the perfect drink to enjoy over ice on hot summer days or to bring a little island warmth to your table year-round.
Course: Drinks
Cuisine: Cypriot, Mediterranean

Ingredients

  • 5 cups freshly squeezed lemon juice about 20–25 lemons
  • 5 cups sugar

Method

  1. Pour freshly squeezed lemon juice through a sieve into a large bowl, pressing to extract as much juice as possible. Discard pulp and seeds.
  2. Add caster sugar to the lemon juice. Stir until mostly dissolved. Cover the bowl with a clean cloth and let sit at room temperature for at least 12 hours, stirring occasionally. Once the sugar has fully dissolved, transfer to clean glass bottles and store in the fridge.
  3. When ready to enjoy, dilute the lemon cordial with ice-cold water to your taste preference. Serve over ice and garnish with mint leaves and lemon slices (optional).
