Μηλόπιτα - Apple Cake
INGREDIENTS
3 green apples peeled and cored
60ml lemon juice
60g butter
55g brown sugar
2 tsp ground cinnamon
125g softened butter
170g caster sugar
1 tbsp finely grated lemon rind
1 tsp vanilla extract
2 separated eggs
150g self-raising flour
60ml milk
METHOD
1. Preheat oven to 160°C
2. Chop 2 of the apples in small chunks and slice the other apple thinly. Combine with lemon juice in separate bowls.
3. Stir the 60g of butter, brown sugar and 1 tsp of cinnamon in a small saucepan over low heat until sugar dissolves.
4. Beat the 125g of butter, caster sugar, lemon rind, vanilla extract and egg yolks in a small bowl until light and fluffy.
5. Stir in sifted flour, 1 tsp of cinnamon and milk, in two batches.
6. Beat egg whites until soft peaks form and fold into cake mixture in two batches.
7. Drain the apple chunks. Gently fold into the cake mix.
8. Pour your mix into a buttered and lined heatproof dish or cake mix.
9. Drain the apple slices and stir them in the warm brown sugar mix. Arrange the apple slices on top of your cake.
10. Drizzle the rest of the brown sugar mix and bake for 50 minutes, until golden.
