Breakfast Mushrooms

INGREDIENTS
1/2 cup chopped parsley
6 tbsp olive oil
3 tbsp lemon juice
Pinch of oregano
Pinch of chilli flakes - or however spicy you like it
Salt to taste
500g white mushrooms quartered, or any kid that you prefer
2 tbsp olive oil

METHOD
1. Mix the parsley, olive oil, lemon juice, oregano, chilli flakes and salt in a bowl and let it sit and infuse while you cook the mushrooms.
2. Heat the olive oil in a large frying pan on a high heat.
3. Add all the mushrooms and give the pan a shake to spread the mushrooms out evenly. Cook for about 1 min before stirring. Keep on high heat, tossing or stirring every minute or so. Cook until the water has fully evaporated.
4. Add the hot mushroom into the bowl with the dressing and mix well.

Frank’s Breakfast Mushies. I called them Frank’s because @frank_capo47 is my mushroom supplier at @paddysmarketsflemington. Got back from an early market run with my sweetheart father-in-law, Harry and made breakfast. Threw this together quickly and had to share it with you. If you’re going to make one thing this weekend, cook this. It’ll take 15 minutes max and that includes eating it. Make sure you mop up any remaining dressing with some bread, trust me.
