Kypriakes Patates sto Forno - Cypriot Roasted Potatoes

INGREDIENTS
1kg baking potatoes, peeled and cut into quarters
1 onion, quartered
2 tomatoes, chopped into chunks
1/4 cup extra virgin olive oil
2 pinches of oregano
2 teaspoons salt

METHOD
1. Preheat oven to 180C.
2. Rub and mix the potatoes, onion and tomatoes with olive oil, oregano and salt and place in a roasting pan.
3. Cover with foil and bake for 90 minutes. To add a bit of colour and crispiness, increase the temperature to 200C and remove the foil for the last 15 minutes.

There’s something quite special cooking in a traditional Cypriot clay oven; we don’t have one yet but are thinking of building one this year, so watch this space. I tried to replicate the patates we made in my regular oven last night and I have to admit, they were pretty damn good. Melt in your mouth, highly addictive and easier to make then you think!
