Fasolia Vrasta - Boiled White Beans
INGREDIENTS
500g dried white beans, soaked overnight
1/4 teaspoon baking soda
4 medium potatoes, peeled and chopped into quarters
2 carrots, peeled and sliced
2-3 celery sticks chopped
Dressing
extra virgin olive oil
fresh lemon juice
chopped parsley
salt and pepper
Sides
koulouri daktylia loaf (a must)
canned tuna salad
METHOD
Rinse your overnight soaked beans thoroughly, submerge them in fresh water, and add the baking soda before bringing them to a boil.
As the beans come to a boil, skim off any foam using a slotted spoon.
Drain the beans, replenish them with fresh water, ensuring the beans are fully submerged, and bring to a boil again.
Reduce the heat to a simmer, add your potatoes, carrots and celery and cook for approximately 1 to 1.5 hours until the beans reach a tender consistency.
After cooking, strain the beans and prepare to serve.
While the beans are still hot, pimp them up by drizzling extra virgin olive oil, freshly squeezed lemon juice, finely chopped parsley, and season with salt and pepper.
