Louvi me to kolokoui - Black eyed beans with marrow

Start by checking your beans for any stones and discoloured ones. Place your beans into a large pot and cover with water. Leave to soak overnight.

The next day, drain and rinse the beans. Refill the pot with clean water and add half a lemon, both squeezed and dropped into the pot. Bring to a boil, skimming off any foam that forms. Boil for about 20 minutes. Then, drain and rinse the beans again, replace the water, and continue boiling until the beans are tender and can be gently squeezed between your fingers.

Add your marrow or greens, chicory, silverbeet and endive work well too, and cook until softened.

Drain the water from the beans and greens. Serve dressed with plenty of high-quality extra virgin olive oil, lots of lemon juice, chopped parsley, and salt. And a fresh loaf of koulouri daktylia loaf, obvs!
