Kotopoulo Ttava - Cypriot One Tray Bake

INGREDIENTS

6 bone-in skin-on chicken thighs
800 g potatoes, peeled and quartered
4 onions, peeled and quartered
8 garlic whole cloves
2 tablespoons tomato paste
80 ml olive oil
1 tablespoon ground cumin
1 teaspoon dried oregano
1 teaspoon dried thyme
2 bay leaves
1 cinnamon quill
1 tablespoon sea salt flakes
1 teaspoon freshly ground black pepper
200 ml stock (2 tsp vegeta)
1 lemon

METHOD

Preheat your oven to 200C fan.

Mix the tomato paste, olive oil, dried oregano, dried thyme, bay leaves, ground cumin, ground cinnamon, salt and pepper in a large baking dish.

Add the chicken thighs, potatoes, onions and garlic and make sure everything is coated well. Place the chicken skin side down and pour in the stock. Squeeze lemon juice over everything and place the lemon halves in the centre of the baking dish, facing up.

Cover tightly with foil and bake for one hour. Then remove the chicken from the oven and flip it skin side up. Baste everything and bake for around 1 hour, basting halfway, until you have crispy skin and everything is golden and caramelised.

Serve with Greek yoghurt and salad.
