Patates me Avga - Cypriot Potatoes and Eggs

INGREDIENTS
2-3 medium-sized potatoes
4 eggs
1 tsp dried mint
salt and pepper to taste
1/4 cup olive oil for frying


METHOD
1. Peel, wash, dry and chop the potatoes into about 1-inch cubes. Heat the olive oil on a medium heat and add the potatoes once the oil is slightly sizzling.
2. Fry for about 10 minutes stirring occasionally to avoid the potatoes from sticking. Cook through until golden.
3. Remove the frying pan from the heat while you crack the eggs in a bowl, add the dried mint and beat well.
4. Add the eggs into the frying pan with the potatoes, mix well and place back on a low heat stirring until the eggs are cooked through.
5. Season with salt and pepper.

A two-ingredient dish, one that I'm very used to yiayia making for us. If you’ve managed to get your hands on some eggs, I urge you to give this one a go. It’s quick, delicious, and can be eaten for breakfast, lunch or dinner. Measurements don’t need to be totally exact so you can roll with what you have. Hope you guys are all doing ok.
